I’m going to be honest, I’m a little bit lazy when it comes to meal planning and cooking when I head off for a weekend of camping.

There’s already so many things to coordinate for the weekend like: making sure we packed all of our camping gear and hiking gear, (or climbing gear depending on the weekend), getting the cooler ready, getting groceries and energy bars... all the things.

The last thing I want to do when I get to camp is make an overly complicated meal for dinner.

No! I want to enjoy myself.

I want to sit back, hang out with friends, drink a beer, relax and finally kick back and enjoy my weekend.

So, I love a good one-pot camping recipe.

Give me a camp recipe that is easy to prep, easy to cook, easy to clean, and of course, still delicious.

And that is why I’m so excited to share this brand-new recipe Michael and I cooked up a few weekends ago that meets ALL of these tick boxes.

Introducing, easy, one-pot chicken tikka masala tacos!

This is might be one of my new favorite camp recipes, and I’m willing to bet you’ll love it too if you give it a shot.

EASY ONE-POT CHICKEN TIKKA MASALA TACOS

So what’s the secret behind these delicious easy, camp-friendly chicken tacos?

The secret is: The Maya Kaimal Tikka Masala Simmer Sauce.

The Maya Kaimal Simmer Sauces are some of our very favorite sauces for cooking with, and instantly elevate any dish you’re making. I’ve made stir fry’s, soups, sloppy joes, and even Dutch oven nachos with them. The flavors are amazing, and these sauces make it literally impossible to cook a bad-tasting meal with.

That’s why I knew the Tikka Masala simmer sauce would make a great addition to our chicken taco recipe.

We also used the Maya Kaimal Perfectly Plain Surekha Rice Packets in the dish as well to make it even more hearty and filling.

WHY WE LOVE THIS ONE-POT CHICKEN TIKKA MASALA TACO RECIPE 

We’ve always been a big fan of Maya Kaimal Food products because of their focus on wholesome, healthy ingredients, easy grab-and-go packaging (perfect for camping and backpacking), and their products are full of rich flavor.

Here are some of the reason we love this particular recipe which features both the Maya Kaimal Simmer Sauces and Surekha Rice Packets.

  • The prep for this recipe is minimal (just a bit of veggie chopping for taco toppings)

  • These tacos are super easy to cook (fool-proof I dare say?) thanks to the huge flavor the Tikka Masala Simmer Sauce adds. No iron-chef skills needed here, and yet this recipe will still impress anyone at your campsite.

  • These tacos are hearty and filling, thanks to both the chicken and Surekha rice used in this recipe.

  • Plus, you only need one pot to cook it in, so the clean-up is easy as well.

  • And like with all Maya Kaimal Food products, you can feel really great eating this recipe because their products are Non-GMO, USDA certified organic, Kosher certified, gluten free, and vegetarian (some are vegan).

EQUIPMENT NEEDED

You're going to need to make sure and pack a few items into your car for this, but if you’re already headed out on a camping trip for the weekend, you might already have most of these items packed up anyways.

Here’s what you’ll need: 

1) A camp stove + fuel – We used our 2-burner Coleman Stove and fuel for this recipe, but really you only need a 1-burner stove since this is a one-pot recipe.

2) A cutting board and knife – To cut up toppings for the tacos (and the chicken if you didn’t buy it pre-cubed)

3) A large skillet – To cook the chicken, rice, and sauce mixture in

4) A large spoon – To stir with and dish into the tacos once cooked

5) Eating Utensils – You’ll want a plate for each person, and possibly some forks (though you’ll likely be using your hands to eat the tacos)

And that’s pretty much it.

RECIPE - CHICKEN TIKKA MASALA TACOS

So, let’s dive into this super-easy, one-pot taco recipe. We’ve listed out all the ingredients and steps needed below, and we’ve also created this fun recipe video below for the chicken tikka masala tacos, so be sure to check it out!

Serving Size: Serves 4 people

Prep & Cook Time: About 30 minutes total

 Ingredients:

1. 1 jar of Maya Kaimal Tikka Masala Simmer Sauce
2. 1 packet of Maya Kaimal Perfectly Plain Surekha Rice
3) 1 ½ lbs. boneless, skinless chicken, cut into 1-inch cubes
4) 1 cup of peas
5) 1 bunch of green onions (chopped for garnishing)
6) A few radishes (sliced thinly for garnishing)
7) 1 avocado (sliced/cubed for garnishing)
8) 12 small-medium sized tortillas (we used flour tortillas)
9) Cilantro (chopped for garnishing)

Other Basics: 1 tablespoon oil (like grapeseed oil or coconut oil), salt (to taste), pepper (to taste 

Directions:

In a medium-sized skillet or Dutch oven, heat the oil over medium heat. Add in your cubed chicken and brown the chicken lightly on all sides.

Add the Tikka Masala sauce to the pot and stir it all together. Then reduce the heat to medium-low and add in peas and the Surekha rice and cover the pot and allow the mixture to simmer for about 15 minutes (or until the chicken is cooked all the way through).

Note: If you aren’t using the Surekha Rice Packets (which allow for quick cooking), then you’ll need to cook your rice separately and according to the direction on the packet. The Surekha Rice Packets from Maya Kaimal make this dish super easy and quick (so I highly recommend using them if you don’t want to hassle with traditionally cooked rice).

Also, if you find that your sauce becomes too thick during this process, you can add a bit of water to thin it out (but we didn’t have this issue).

You should end up with a hearty chicken and rice mixture.

When the chicken, rice and peas are ready, line your plate with 3 tortillas, and fill each taco with the mixture.

Top with avocado, green onion, cilantro and radishes (to your liking), and then dig in!

We found this recipe would easily feed 4 people with roughly 3 hearty tacos.

The whole cook/prep time should really take no more than 30 minutes, and it’s mostly hands off. 

Other Variations: You could also try this taco recipe with a different Simmer Sauce like the Maya Kaimal Butter Masala or the Goan Coconut Simmer Sauce. They’re all really delicious. Click here for a look at all the different Maya Kaimal Simmer Sauces.
